Minced Turkey Casserole

This is a great dish that's easy to make and awesome for when there's lots of people coming to visit. Full of flavour without unnecessary calories or carbs, this truly is an anytime meal.

Ingredients
  • 200g navy beans (cooked or canned, drained)
  • 225ml coconut milk
  • 1 tsp turmeric
  • 1 tsp ground coriander (or a handful of fresh)
  • 1 tsp salt
  • 1 tsp coconut oil
  • 600-800g ground turkey
  • 1 cup diced onion
  • 200g cups thinly sliced carrots
  • 200g chopped (2cm pieces) asparagus
  • 200g grated cabbage or kale
  • 75g sliced almonds
  • 200g cups shredded low fat mature cheddar
Directions
  • Preheat the oven to 450°F or gas mark 8
  • Blend the navy beans, half the coconut milk, turmeric, coriander and salt to a smooth puree
  • Set aside and stir in the rest of the coconut milk
  • Preheat a non-stick frying pan on a medium heat and lightly coat with coconut oil
  • Sauté the turkey in batches until the meat is browned then transfer to a large casserole dish
  • Add the remaining ingredients to a casserole dish, including the vegetables and pureed bean mixture, and cover
  • Stir well to mix thoroughly and bake for 25-30 minutes

Makes 3 large or 6 small portions
