Coconut Chicken Goujons


A quick and easy high protein snack that will help stave off sugar cravings and keep hunger at bay.

  • 170-200g boneless, skinless chicken breast sliced into strips
  • 1 medium egg
  • 50g of coarse whole wheat bread crumbs
  • 50g grated coconut
  • 1 pinch pepper
  • 1 pinch paprika
  • 2 pinches salt
  1. Preheat your oven to 350°F
  2. Cut 170g chicken into 1?2 inch strips
  3. Put 1 egg and 2 tbsp water into a mixing bowl
  4. Mix 1?4 cup of coarse whole wheat bread crumbs with 1?4 cup grated coconut, 1 pinch pepper, 1 pinch paprika, 2 pinches salt in a separate mixing bowl
  5. Dip the chicken into the egg and toss until completely coated, allow any excess to drip off
  6. Place into the coconut and breadcrumb mix and roll until evenly coated
  7. Place greaseproof paper onto a baking sheet and then place the coated strips onto the tray and then put them into the oven
  8. Bake until golden brown or cooked through (about 15 minutes), you can remove and cut in half to check doneness
