Cauliflower Rice


This alternative to conventional rice not only takes a fraction of the time to cook, but also provides similar feelings of fullness, a healthy hit of fibre. All of which comes with very few calories and almost zero impact on your blood sugar levels.

  • 1 head of cauliflower
  • 1 pinch pepper
  • ?1 pinch chopped coriander
  • 1 pinch paprika
  • 1/2 tsp chopped chilli
  • ?1/2 tsp chopped garlic
  • 1/2 tsp crushed ginger

To make this dish as easy to prepare and delicious as possible, there are three pieces of equipment that may be particularly helpful:

A food processor
A cheese grater
A large frying pan

  1. Process the cauliflower either using the plain or shredder blades of the food processor, or grate it using a hand held cheese grater.
  2. Add the pepper, coriander and paprika and mix thoroughly.
  3. Option 1:
    Briefly fry the chilli, garlic and ginger in coconut or hazlenut oil until it aromatises. Add the grated cauliflower and fry on high for 60-120 seconds
  4. Option 2:Microwave the cauliflower in the covered dish for 1-2 minutes

DO NOT ADD WATER. Cauliflower absorbs water like crazy and the rice will very easily become gummy. To keep the ‘rice’’ fluffly, let the moisture in the cauliflower do the work.
