Beef and Prawn Kebabs with Grilled Vegetables

Ingredients
Kebabs
- 2 Beef Sirloin Steaks, thinly sliced
- 300g Raw King Prawns
- 1 Peeled Red Onion cut into wedges
- 2 Red, Yellow or Orange Peppers cut into chunks
- 4 Baby Aubergines cut into chunks
- 2 tbsp Olive Oil
- 200-300g Baby Leaf Spinach
- 20g Fresh Coriander torn into pieces
Dressing
- 4 tbsp Olive Oil
- 1 tsp honey
- ½ Clove Garlic, crushed
- ½ Lemon, juice and zest
- ½ Red Chilli, finely chopped
Directions
- Pre-heat your grill, barbecue or griddle pan to a high temperature
- Toss the beef, prawns, onion, peppers and aubergines with the oil until coated evenly, before threading the pieces on to wooden or metal skewers
- Grill for 5-6 minutes, turning occasionally to ensure they are cooked evenly
- Whilst the skewers are cooking, make the dressing by mixing all of the ingredients together until they emulsify
- Once the kebabs are cooked, serve them on top of the spinach, lightly sprinkling them with the coriander
