Beef and Prawn Kebabs with Grilled Vegetables


A high-nutrient hit that's quick and easy to prepare, yet delicious and good for the waistline.

  •  2 Beef Sirloin Steaks, thinly sliced
  •  300g Raw King Prawns
  •  1 Peeled Red Onion cut into wedges
  •  2 Red, Yellow or Orange Peppers cut into chunks
  •  4 Baby Aubergines cut into chunks
  •  2 tbsp Olive Oil
  •  200-300g Baby Leaf Spinach
  •  20g Fresh Coriander torn into pieces


  •  4 tbsp Olive Oil
  •  1 tsp honey
  •  ½ Clove Garlic, crushed
  •  ½ Lemon, juice and zest
  •  ½ Red Chilli, finely chopped
  1. Pre-heat your grill, barbecue or griddle pan to a high temperature
  2. Toss the beef, prawns, onion, peppers and aubergines with the oil until coated evenly, before threading the pieces on to wooden or metal skewers
  3. Grill for 5-6 minutes, turning occasionally to ensure they are cooked evenly
  4. Whilst the skewers are cooking, make the dressing by mixing all of the ingredients together until they emulsify
  5. Once the kebabs are cooked, serve them on top of the spinach, lightly sprinkling them with the coriander
